Grilled Zucchini & Chickpea Salad

A healthy and tasty twist to a green salad with grilled zucchini, baby broccoli, salad leaves and chickpeas finished with Birch & Waite Garlic & Coriander Dressing.

INGREDIENTS
Serves 4-6
100ml Birch & Waite Garlic & Coriander Dressing
2 large zucchini, sliced diagonally
150g mesclun leaf mix
70g shaved parmesan
400g can chickpeas, drained
1 bunch baby broccoli, blanched
METHOD
  • Pre heat BBQ grill or griddle plate. Cook zucchini until lightly charred and just tender. Remove from heat
  • Combine with all salad ingredients on a platter, board or large plate.
  • Dress with Birch & Waite Garlic & Coriander Dressing.
