A Recipe for Success
In 1986, Willi Schultheiss and Peter Flick began Birch & Waite's story when they saw the opportunity to celebrate the abundance of superior quality fresh produce in Australia.
Drawing from his rural Swiss heritage and passion for fresh produce, our founder Willi Schultheiss longed for the same creamy taste and superior quality Whole Egg Mayonnaise he loved back home.
Willi and Peter combined their vision and food philosophy to create authentic, chef quality batch crafted products and after 73 iterations, they perfected Australia's first, traditional Whole Egg Mayonnaise - our signature product to this day.
This endless pursuit of culinary perfection and innovation then led our founders to partner with Australia's leading chefs and food businesses to craft an extensive range of chef quality, fresh chilled products that celebrate the taste of Australian produce.
Continuing on with Peter and Willi's legacy, Birch & Waite has grown to include a committed team which brings pride and passion from their diverse backgrounds evolving our vision and food philosophy such that it meets the changing needs of the Australian foodservice industry and Retail Grocery consumers.

Birch & Waite’s Fresh Chilled Mayonnaise captured the attention of leading Executive Chefs and was discovered by International Airlines and placed on their in-flight catering menu in 1990. Soon after, other Australian and International airlines featured Birch & Waite products including Mayonnaise, Dressings, Dips and Sauces.
Building on these foundations, Birch & Waite established a reputation for pioneering distinct food products, using fresh Australian ingredients, with an uncompromising commitment for superior quality. This led us to collaborate with many of Australia’s leading Chefs and today Birch & Waite continues to be the preferred brand of professional chefs for fresh chilled Mayonnaise, Sauces, Dressings, Relishes and Dessert.

Our commitment to excellence and innovation saw Birch & Waite pioneer fresh chilled Mayonnaise in Food Service and fresh chilled dressings in retail. This has seen us recognised as a BRW Top 50 Most Innovative Company, Chefs Decision Award for best Mayonnaise in Australia as well as multiple consumer Product of the Year awards.
