Aioli Frittata

Ingredients

Whole Egg Aioli Garlic Mayonnaise
3 eggs, whisked
1/4 cup broccolini, chopped
1/4 cup spinach, chopped
1/3 cup goats cheese
Pinch of chilli flakes
1/4 cup kale, chopped
1/2 cup Birch & Waite Garlic Aioli
Salt and pepper to taste
       
SERVES: 4-6
PREPARATION TIME: 20 mins

Method

  1. Coat a pan with non-stick spray or olive oil. Add eggs, vegetables, salt, and pepper, and cook over medium heat on the stove until sides begin to cook well in pan.
  2. Add in the Aioli and finish with remainder of the vegetables and pop in the oven for a further 5-10 minutes.
  3. Finish with the goats cheese and sprinkle of chilli flakes.
