Ingredients

Greek Lemon Dressing
1/3 cup fresh mint, chopped
1 cup chopped roasted capsicum
1 cup cooked cous cous

Method

  1. Cook your cous cous as per packet cooking instructions, with some chicken stock instead of water to give some added flavor.
  2. Chop your fresh mint along with your roasted capsicum. Rest aside and add to your cous cous once cooked and fluffed up. Allow to cool.
  3. Add your fresh mint and gently coat with a good splash of the Greek Lemon Dressing ensuring an equal coating.
