Greek Lemon Dressing
|1/3 cup fresh mint, chopped|
|1 cup chopped roasted capsicum|
|1 cup cooked cous cous|
PREPARATION TIME: 20 mins
- Cook your cous cous as per packet cooking instructions, with some chicken stock instead of water to give some added flavor.
- Chop your fresh mint along with your roasted capsicum. Rest aside and add to your cous cous once cooked and fluffed up. Allow to cool.
- Add your fresh mint and gently coat with a good splash of the Greek Lemon Dressing ensuring an equal coating.
