Flourless Mayo Cake

Ingredients

Whole Egg Mayonnaise
1 ½ cups good quality chocolate buttons or chips
200ml of Birch & Waite whole egg mayonnaise
¼ tsp salt
6 eggs, room temperature
1 ½ cups white sugar

Method

Preheat oven to 160 degrees. Prep your non-stick spring form pan, with non-stick spray.

Place your chocolate, mayonnaise, and salt in a large pot and melt for roughly 60 seconds. Stir and repeat until completely melted,

Beat the eggs and sugar with a mixer, until light and thickened. Add your melted chocolate mixture into the creamed eggs until evenly combined.

Pour the batter into the prepared pan and bake for around 90 minutes. Allow to cool before serving.
