French Lentil Salad
|2 washed radishes, thinly sliced|
|2 washed spring onions, diced|
|100g pancetta, diced|
|1 tin lentils, drained and rinsed|
|½ cup chopped parsley|
Wash and prepare your parsley, spring onions and radishes. Place in bowl.
Rinse and drain lentils well, add to bowl with olives.
In a nonstick pan, fry your pancetta until crisp and remove and allow to cool.
Add your pancetta to your prepared bowl of ingredients, and coat generously with Birch & Waite Balsamic Dressing.
