Haloumi Salad

Ingredients

Greek Lemon Dressing
1 cup precooked quinoa
1 punnet Roma tomatoes, halved
2 large cucumbers, washed and cut roughly into quarters
1 small block of Haloumi cheese
½ cup chopped mint leaves
       
SERVES: 2
PREPARATION TIME: 10 mins

Method

  1. Place your precooked quinoa into a bowl; mix in your chopped cucumber, mint and tomatoes. Place your haloumi slices in a pan and gently cook until golden on both sides.
  2. Gently toss your quinoa and vegetable mixture with the Greek Lemon Dressing and serve with your warm haloumi slices on top.
