Greek Lemon Dressing
|1 cup precooked quinoa|
|1 punnet Roma tomatoes, halved|
|2 large cucumbers, washed and cut roughly into quarters|
|1 small block of Haloumi cheese|
|½ cup chopped mint leaves|
PREPARATION TIME: 10 mins
- Place your precooked quinoa into a bowl; mix in your chopped cucumber, mint and tomatoes. Place your haloumi slices in a pan and gently cook until golden on both sides.
- Gently toss your quinoa and vegetable mixture with the Greek Lemon Dressing and serve with your warm haloumi slices on top.
