Lentil & Rice Salad
|1 tin lentils, washed and drained|
|8 cherry or roma tomatoes, halved|
|1 cup precooked brown rice|
|1/3 cup crumbled feta|
|1/3 cup flat leaf parsley, roughly chopped|
PREPARATION TIME: 10 mins
- Drain and rinse your lentils and set aside in bowl. Add to your bowl your chopped tomato, cooled brown rice and parsley.
- Add to your bowl a good lashing of the Birch & Waite Balsamic Dressing till evenly coated and mix well.
- Add your feta as a final flourish and you are ready to serve.
