Lentil & Rice Salad

Ingredients

Balsamic Vinaigrette
1 tin lentils, washed and drained
8 cherry or roma tomatoes, halved
1 cup precooked brown rice
1/3 cup crumbled feta
1/3 cup flat leaf parsley, roughly chopped
       
SERVES: 4
PREPARATION TIME: 10 mins

Method

  1. Drain and rinse your lentils and set aside in bowl. Add to your bowl your chopped tomato, cooled brown rice and parsley.
  2. Add to your bowl a good lashing of the Birch & Waite Balsamic Dressing till evenly coated and mix well.
  3. Add your feta as a final flourish and you are ready to serve.
