Poached Chicken Salad with Whole Egg Mayonnaise
Whole Egg Mayonnaise
|2-3 half chicken breasts, poached or pan-friend|
|100g snow peas|
|1 bunch asparagus, trimmed and sliced|
|100g shelled broad beans|
|Seeds of 1 pomegranate|
|2 radishes, finely sliced|
|1/2 cup pecan nuts|
|Mixed micro herbs|
PREPARATION TIME: 40 mins
- Cook and slice chicken into small bite size pieces.
- Toss cooled chicken slices in ½ a cup of Birch & Waite Whole Egg Mayonnaise to generously coat.
- Blanch snow peas and asparagus until just tender. Refresh in cold water.
- Combine salad ingredients with mayonnaise chicken in a bowl and finish with extra dollops of Birch & Waite Whole Egg Mayonnaise.
NB: cold BBQ chicken meat is suitable for this recipe.
