Super Foods Salad
|8 baby roma tomatoes, halved|
|1 can of chickpeas|
|1/3 cup chopped parsley|
|400g pumpkin, cubed and roasted|
|2 cups, pre cooked quinoa|
PREPARATION TIME: 30 mins
- Dice your pumpkin and place in a preheated 180-degree oven and roast for 20-25 minutes until golden and tender.
- In your large bowl, add in your precooked quinoa, chickpeas, fresh chopped parsley and baby roma tomatoes.
- Once cooled, add your pumpkin to your bowl along with a good drizzle of the Balsamic Dressing and coat well.
