Ingredients

Balsamic Vinaigrette
8 baby roma tomatoes, halved
1 can of chickpeas
1/3 cup chopped parsley
400g pumpkin, cubed and roasted
2 cups, pre cooked quinoa

Method

  1. Dice your pumpkin and place in a preheated 180-degree oven and roast for 20-25 minutes until golden and tender.
  2. In your large bowl, add in your precooked quinoa, chickpeas, fresh chopped parsley and baby roma tomatoes.
  3. Once cooled, add your pumpkin to your bowl along with a good drizzle of the Balsamic Dressing and coat well.
