Thai Coleslaw

Ingredients

Thai, Lime & Coriander Dressing
3 cups red shredded cabbage
1 bunch asparagus, blanched
1/2 cup chopped peanuts
1 cup parsley leaves
1 cup Coriander leaves
1/3 cup dried shallots
1/2 cup of Birch & Waite Thai Lime Dressing
       
SERVES: 2-4
PREPARATION TIME: 10mins

Method

  1. Shred your red cabbage and place on your serving plate.
  2. Blanch your asparagus for a minute and place aside.
  3. Arrange your your herbs, asparagus on top of your cabbage and drizzle with the Fresh Thai Dressing.
  4. Top with your peanuts and dried shallots.
