Thai Lettuce Cups

Ingredients

Thai, Lime & Coriander Dressing
Lettuce leaves, rinse and set aside
4 spring onions, diced
2 red chilies, deseeded and chopped
1 tin of water chestnuts drained and chopped
1 pack of beef mince
Sesame seeds
Sweet chili sauce

PREPARATION TIME: 20 mins

Method

  1. Simply fry your beef mixture with your spring onions, water chestnuts and chilies until starting to brown. Add in a few dashes of soy sauce, sweet chili and allow to cook for an additional two minutes. Add that final flourish of the Thai Lime dressing and mix well.
  2. Allow to cool, prepping your lettuce leaves. Spoon warm mixture onto your lettuce leaves and sprinkles with sesame seeds for that extra crunch.
