Thai Mango Salad
|1 large mango cut into slices|
|1 large red chili chopped finely|
|1 large pepper, chopped finely|
|½ cup mint and coriander torn|
|½ cup peanuts, roughly chopped|
|2 large cucumbers cut into ribbons|
Prepare your mango and cut into strips. Prepare your cucumber by peeling strips with your vegetable peeler stopping at the seed.
Wash and prepare your fresh herbs.
Slice your red pepper and chili, and set aside. Roughly chop your peanuts and add to bowl.
Add all your ingredients into your serving bowl and generously drizzle with the Thai Lime & Coriander Dressing and finish off with your chopped peanuts.
