Thai Noodle Salad
Thai, Lime & Coriander Dressing
|2 spring onions, roughly chopped|
|2 red chilies, sliced|
|1/3 cup coriander leaves|
|1/3 cup cashews, roasted and chopped|
|1 cucumber, sliced|
|1 pack of vermicelli noodles|
PREPARATION TIME: 15 mins
- Place your vermicelli noodles in a large heatproof bowl and cover with boiling water for 5 minutes. Drain and leave in the bowl to cool.
- Add cucumber, coriander, chili and spring onions to your cooked noodles along with your toasted cashew nuts.
- Add a generous splash of the Thai, Lime & Coriander Dressing and gently toss.
