Aioli Frittata

SERVES: 4-6
PREP TIME: 20 minutes

free range eggs, whisked 3

broccolini, chopped 1/4 cup

spinach, chopped 1/4 cup

goats cheese 1/3 cup

Pinch of chili flakes

kale, chopped 1/4 cup

sea salt and pepper to taste

Method

  1. Preheat oven to 180°C.
  2. Coat an oven-safe pan with non-stick spray or olive oil. Add eggs, vegetables, salt and pepper, and cook on stove at medium heat until edges begin to cook.
  3. Add in Birch & Waite Garlic Aioli and place pan in the oven for 5-10 minutes.
  4. Finish with the goats cheese and a sprinkle of chili flakes.
