Chicken and Chickpea Power Salad

PREP TIME: 10 minutes

Shredded cooked chicken breast ½ cup

Drained tinned chickpeas ¼ cup

Crumbled soft Danish feta ¼

Pre cooked quinoa ½ cup

Baby spinach leaves 1 cup

Cherry tomato’s halved 4

Sliced red onion ¼ cup


  1. Combine chicken, chickpeas, onions, quinoa in a large bowl. Season with black pepper. Toss gently to combine.
  2. Layer baby spinach leaves into your container and top with the ingredients from your large bowl.
  3. Place Birch & Waite Green Goddess dressing portion in your container and when ready to eat, drizzle and enjoy.
