Chicken and Chickpea Power Salad

Shredded Cooked Chicken Breast½ cup
Drained Tinned Chickpeas¼ cup
Crumbled Soft Danish Feta¼
Pre Cooked Quinoa½ cup
Baby Spinach Leaves1 cup
Cherry Tomato’s Halved4
Sliced Red Onion¼ cup
Green Goddess Dressing35 mL portion

Method

  1. Combine chicken, chickpeas, onions, quinoa in a large bowl. Season with black pepper. Toss gently to combine.
  2. Layer baby spinach leaves into your container and top with the ingredients from your large bowl.
  3. Place Birch & Waite Green Goddess dressing portion in your container and when ready to eat, drizzle and enjoy.
