Chickpea Salad with Greek Lemon Dressing

PREP TIME: 15 minutes

Avocados 2

Cherry tomatoes 1 punnet

Mixed baby green leaves

Chickpeas, drained and rinsed ½ can

Lebanese cucumber 2


  1. Wash and dry baby green leaves.
  2. Slice cucumbers and halve cherry tomatoes. Peel and dice avocados separately in a small bowl and dress with 1 tbsp. of Birch & Waite Greek Lemon Dressing (to prevent browning of avocado).
  3. Combine all ingredients in a bowl and dress with remainder of Birch & Waite Greek Lemon Dressing.
  4. Optional: add lean grilled chicken, fish, pork or beef.
