Halloumi Salad

PREP TIME: 10 minutes

pre-cooked quinoa 1 cup

Roma tomatoes, halved 1 punnet

large cucumbers, washed and cut roughly into quarters 2

Halloumi cheese, sliced 180 g

chopped mint leaves 1/2 cup


  1. Cook quinoa according to packet and leave to cool.
  2. In a bowl mix in the chopped cucumber, mint and tomatoes.
  3. Place halloumi slices in a pan and cook until golden on both sides.
  4. Gently toss quinoa and vegetable mixture with Birch & Waite Greek Lemon Dressing. Serve with warm halloumi slices on top.
