Grilled Greens and Tonnato Sauce with Whole Egg Mayonnaise

Tinned tuna in oil185g
Garlic clove1
Capers2 tbsp
Lemon1
Birch & Waite Signature Whole Egg Mayonnaise250g
Asparagus1 bunch
Broccolini1 bunch
Green beans250g
Chilli oil1 tbsp

Method

  1. For the Tonnato, combine the tinned tuna, garlic, capers, juice of 1 lemon, Birch & Waite Signature Whole Egg Mayonnaise, and a little salt and pepper into a blender.
  2. Blend to a smooth sauce and store in the fridge.
  3. Preheat a BBQ or grill pan.
  4. Toss the asparagus, broccolini, and green beans in with the olive oil and seasoning, then on a high heat grill for approximately 4 minutes, turning throughout, until the veggies are slightly charred.
  5. For plating, scatter rocket over a platter, top with the grilled veggies, spoon over some tonnato sauce and garnish with remaining capers, herbs, and chilli.
  6. Serve with extra tonnato and lemon wedges and enjoy!

The tonnato can be premade and stored in the fridge for up to a week.
