Asparagus | 1 bunch |
Broccolini | 1 bunch |
Green beans | 250g |
Chilli oil | 1 tbsp |
Method
- For the Tonnato, combine the tinned tuna, garlic, capers, juice of 1 lemon, Birch & Waite Signature Whole Egg Mayonnaise, and a little salt and pepper into a blender.
- Blend to a smooth sauce and store in the fridge.
- Preheat a BBQ or grill pan.
- Toss the asparagus, broccolini, and green beans in with the olive oil and seasoning, then on a high heat grill for approximately 4 minutes, turning throughout, until the veggies are slightly charred.
- For plating, scatter rocket over a platter, top with the grilled veggies, spoon over some tonnato sauce and garnish with remaining capers, herbs, and chilli.
- Serve with extra tonnato and lemon wedges and enjoy!
The tonnato can be premade and stored in the fridge for up to a week.
