Lentil & Rice Salad

PREP TIME: 10 minutes

lentils, washed and drained 1 tin

cherry or roma tomatoes, halved 8

precooked brown rice 1 cup

crumbled feta 1/3 cup

flat leaf parsley, roughly chopped 1/3 cup


  1. Place washed lentils in a bowl and add the chopped tomato, cooked brown rice and parsley.
  2. Add a good lashing of the Birch & Waite Balsamic Vinaigrette till evenly coated and mix well.
  3. Sprinkle with Greek feta for a final flourish before serving.
