Stone Fruit and Haloumi Salad

SERVES: 1
PREP TIME: 20 minutes

Mixed baby lettuce leaves, washed 60 g

Mixed fresh plums, fresh figs & nectarines 150 g

Haloumi, cut into 4 equal size pieces 80 g

Sunflower seeds 20 g

Method

  1. Heat a griddle pan on high heat.
  2. Place a small amount of oil in pan. Grill haloumi on both sides till golden brown. Remove and keep warm.
  3. In a bowl, gently mix lettuce leaves, plums, figs, nectarines and haloumi.
  4. Carefully arrange on a plate. Drizzle with Birch & Waite Beetroot and Blood Orange dressing. Finish with sunflower seeds.
