Thai Lettuce Cups

PREP TIME: 20 minutes

lettuce leaves, rinsed

spring onions, diced 4

red chilies, deseeded and chopped 2

water chestnuts drained and chopped 1 tin

beef mince 500 g

Sesame seeds

Sweet chili sauce


  1. Fry beef mince with spring onions, water chestnuts and chilies until they begin to brown.
  2. Add a few dashes of soy sauce and sweet chili sauce and allow to cook for an additional 2 minutes, before mixing through the Birch & Waite Thai, Lime & Coriander Dressing.
  3. Whilst mince mixture is cooling, prep lettuce leaves. Spoon warm mince mixture onto lettuce leaves and sprinkle with sesame seeds for extra crunch.

Cook’s Note

Pork or chicken mince also works well with this recipe.
