Thai Mango Salad

PREP TIME: 15 minutes

large mango. cut into strips 1

large red chili chopped finely 1

large pepper, chopped finely 1

mint, torn 1/2 cup

coriander, torn 1/2 cup

peanuts, roughly chopped 1/2 cup

large cucumbers cut into ribbons 2

Method

  1. Slice mango and peel cucumber using a vegetable peeler, stopping at the seed.
  2. Wash and prepare the fresh herbs.
  3. Slice the red pepper and chili, and set aside. Roughly chop the peanuts.
  4. Add all the ingredients into a serving bowl and generously drizzle with the Birch & Waite Thai, Lime & Coriander Dressing and finish off with the chopped peanuts.
