Darren Robertson's Chicken Flatbread with Birch & Waite Ranch Dressing Slaw

Prep time:

Whole Chicken1
Soy Sauce1 tbsp
Honey1 tbsp
Cumin1 tsp
Fennel1 tsp
Dried Coriander1 tsp
Minced Garlic1 tsp
Ginger1 tsp
Smoked Paprika1 tsp
Olive Oil
Small Red Cabbagehalf
Red Onion, Diced1
Parsley, Mint & Fresh Coriander, Chopped1 handful each
Ranch Dressing
Diced Cucumber
Tomato Salsa
Hot Sauce Of Your Choice (Optional)


  1. Marinate whole chicken in soy, honey, cumin, fennel, coriander, garlic, ginger and smoked paprika. Roast with olive oil at 185°C for 45 minutes.
  2. Slaw: Chop red cabbage, red onion, herbs and fold through our Birch & Waite Ranch Dressing.
  3. Serve in flatbread with diced cucumber, tomato salsa, a splash of hot sauce and a generous drizzle of Birch & Waite Ranch Dressing. Enjoy!
