Chickpea Salad with Birch & Waite Greek Lemon Dressing

Cherry Tomatoes1 punnet
Mixed Baby Green Leaves
Chickpeas, Drained And Rinsed½ can
Lebanese Cucumber2
Greek Lemon Dressing100 mL


  1. Wash and dry baby green leaves.
  2. Slice cucumbers and halve cherry tomatoes. Peel and dice avocados separately in a small bowl and dress with 1 tbsp. of Birch & Waite Greek Lemon Dressing (to prevent browning of avocado).
  3. Combine all ingredients in a bowl and dress with remainder of Birch & Waite Greek Lemon Dressing.
  4. Optional: add lean grilled chicken, fish, pork or beef.
