Cherry Tomatoes | 1 punnet |
Mixed Baby Green Leaves | |
Chickpeas, Drained And Rinsed | ½ can |
Lebanese Cucumber | 2 |
Greek Lemon Dressing | 100 mL |
Method
- Wash and dry baby green leaves.
- Slice cucumbers and halve cherry tomatoes. Peel and dice avocados separately in a small bowl and dress with 1 tbsp. of Birch & Waite Greek Lemon Dressing (to prevent browning of avocado).
- Combine all ingredients in a bowl and dress with remainder of Birch & Waite Greek Lemon Dressing.
- Optional: add lean grilled chicken, fish, pork or beef.
