Halloumi Salad

Prep time: 10 minutes

Pre-Cooked Quinoa1 cup
Roma Tomatoes, Halved1 punnet
Large Cucumbers, Washed And Cut Roughly Into Quarters2
Halloumi Cheese, Sliced180 g
Chopped Mint Leaves1/2 cup
Greek Lemon Dressing


  1. Cook quinoa according to packet and leave to cool.
  2. In a bowl mix in the chopped cucumber, mint and tomatoes.
  3. Place halloumi slices in a pan and cook until golden on both sides.
  4. Gently toss quinoa and vegetable mixture with Birch & Waite Greek Lemon Dressing. Serve with warm halloumi slices on top.
