Roma Tomatoes, Halved | 1 punnet |
Large Cucumbers, Washed And Cut Roughly Into Quarters | 2 |
Halloumi Cheese, Sliced | 180 g |
Chopped Mint Leaves | 1/2 cup |
Greek Lemon Dressing |
Method
- Cook quinoa according to packet and leave to cool.
- In a bowl mix in the chopped cucumber, mint and tomatoes.
- Place halloumi slices in a pan and cook until golden on both sides.
- Gently toss quinoa and vegetable mixture with Birch & Waite Greek Lemon Dressing. Serve with warm halloumi slices on top.
