|Pre-Cooked Quinoa||1 cup|
|Roma Tomatoes, Halved||1 punnet|
|Large Cucumbers, Washed And Cut Roughly Into Quarters||2|
|Halloumi Cheese, Sliced||180 g|
|Chopped Mint Leaves||1/2 cup|
|Greek Lemon Dressing|
- Cook quinoa according to packet and leave to cool.
- In a bowl mix in the chopped cucumber, mint and tomatoes.
- Place halloumi slices in a pan and cook until golden on both sides.
- Gently toss quinoa and vegetable mixture with Birch & Waite Greek Lemon Dressing. Serve with warm halloumi slices on top.
