Baking Powder | 1 tbsp |
Onion Powder | 2 tsp |
Plant Based Milk | 1 cup |
Corn Kernels | ~1 cup |
Spinach, Finely Chopped | 1/4 cup |
Olive Oil, As Required | |
Green Goddess Dressing & Sauce | 1/4 cup |

Method
- To make pancakes: Add all dry ingredients to a medium-size mixing bowl and mix until combined. Add the remaining pancake ingredients including Birch & Waite Green Goddess Dressing & Sauce and mix until just combined and there are no pockets of flour.
- Place a large fry pan over medium heat. When pan is hot, drizzle with a little oil. Pour about ¼ cup of batter into a pancake shape on pan. Repeat if space on fry pan.
- Cook the pancakes until edges start to dry up and bubbles appear on surface. Carefully flip each pancake and cook until puffed up.
- Serve pancakes immediately, topping with avocado, spinach, tomato, herbs of choice and a generous drizzle of Birch & Waite Green Goddess Dressing & Sauce. Enjoy!
