Anthea Cheng's Vegan Corn & Spinach Pancakes with Birch & Waite Green Goddess Dressing & Sauce

Prep time:

Plain, Wholemeal Or Spelt Flour1 cup
Baking Powder1 tbsp
Onion Powder2 tsp
Plant Based Milk1 cup
Corn Kernels~1 cup
Spinach, Finely Chopped1/4 cup
Olive Oil, As Required
Green Goddess Dressing & Sauce1/4 cup
Sautéed Spinach
Cherry Tomatoes
Herbs Of Choice
Green Goddess Dressing & Sauce


  1. To make pancakes: Add all dry ingredients to a medium-size mixing bowl and mix until combined. Add the remaining pancake ingredients including Birch & Waite Green Goddess Dressing & Sauce and mix until just combined and there are no pockets of flour.
  2. Place a large fry pan over medium heat. When pan is hot, drizzle with a little oil. Pour about ¼ cup of batter into a pancake shape on pan. Repeat if space on fry pan.
  3. Cook the pancakes until edges start to dry up and bubbles appear on surface. Carefully flip each pancake and cook until puffed up.
  4. Serve pancakes immediately, topping with avocado, spinach, tomato, herbs of choice and a generous drizzle of Birch & Waite Green Goddess Dressing & Sauce. Enjoy!
