Green Goddess Grilled Chicken, Asparagus & Haloumi Stack

Birch & Waite Green Goddess Dressing & Sauce4 tbsp + 4 tbsp
Haloumi, sliced into strips180g
Chicken tenderloins500g
Asparagus3 bunches
Olive oilSpray
Pine nuts2 tbsp
Rocket leavesHandful

Method

  1. Lightly spray chicken, asparagus and sliced haloumi with olive oil.
  2. Using a grill pan, start grilling the chicken tenderloins first, basting them with Green Goodness dressing. After a few minutes, add the asparagus to the grill and after another few minutes, add the haloumi.
  3. Cook until chicken has browned and is cooked through, asparagus will be bright green and tender and haloumi will be golden brown.
  4. Once cooked, stack all ingredients on individual plates starting with asparagus, haloumi, chicken then top with rocket, pine nuts and a drizzle of Green Goddess dressing. Serve as is or with fresh bread.
