Haloumi, sliced into strips | 180g |
Chicken tenderloins | 500g |
Asparagus | 3 bunches |
Olive oil | Spray |
Pine nuts | 2 tbsp |
Rocket leaves | Handful |
Method
- Lightly spray chicken, asparagus and sliced haloumi with olive oil.
- Using a grill pan, start grilling the chicken tenderloins first, basting them with Green Goodness dressing. After a few minutes, add the asparagus to the grill and after another few minutes, add the haloumi.
- Cook until chicken has browned and is cooked through, asparagus will be bright green and tender and haloumi will be golden brown.
- Once cooked, stack all ingredients on individual plates starting with asparagus, haloumi, chicken then top with rocket, pine nuts and a drizzle of Green Goddess dressing. Serve as is or with fresh bread.
