Roast Chicken with Birch & Waite Greek Lemon Dressing

|Greek Lemon Dressing|
- Preheat oven to 200°C fan-forced. Place chicken in an oven safe pan skin side up. Optional: add potatoes and sliced lemon underneath.
- Combine butter, salt and pepper in a cup. Using hands, spread evenly over chicken skin. Drizzle chicken with Birch & Waite Greek Lemon Dressing and sprinkle over thyme.
- Roast for 30 mins. Reduce heat to 160°C and generously add more Birch & Waite Greek Lemon Dressing. Cook again for a further 15 mins. Slice, serve and enjoy!
