Cod & Olive Napoletana

Prep time:

Smoked paprika1 tsp
Flaky salt½ tsp
Garlic powder1 tsp
Oil1½ tbsp
Cod fillets600g
Birch & Waite Red Wine Napoletana Pasta Sauce2 packets
Pitted olives (green and kalamata)12
Chopped packed parsley¼ cup
Grated Parmesan cheese¼ cup


  1. Mix smoked paprika, salt and garlic powder in a bowl.
  2. Place cod fillets on a plate and rub the marinade all over the cod on both sides.
  3. Drizzle cod with ½ tablespoon oil and rub the marinade in.
  4. Heat the remaining oil in a large cast iron frying pan on medium. Add cod and cook on one side for approximately 3 minutes until seared and starting to brown. Flip gently and cook the other side for a minute.
  5. Add Birch & Waite Red Wine Napoletana Pasta Sauce and olives around the cod.
  6. Cover and cook for 7-8 minutes until the cod is cooked through.
  7. Remove from heat. Garnish with parsley and sprinkle with cheese. Serve hot.
