Grilled Chicken Mango & Avocado Salad with Birch & Waite Golden Goddess Dressing & Sauce

Prep time:

Chicken Thigh Fillets, Cut Into Strips500 g
Grated Ginger1 tsp
Garlic Cloves, Minced2
Light Soy Sauce1 tbsp
Cornflour1 tbsp
Juice Of 1 Lime
White Pepper1/4 tsp
Brown Sugar1 tsp
Salt1 tsp
Oil For Pan Frying
Dry Soba Noodles180 g
Sesame Oil1 tsp
Red Chilli Flakes1/2 tsp
Large Pinch Of Salt & Pepper
Red Onion, Peeled Halved And Thinly Sliced1
Small Red Capsicum, Trimmed And Thinly Sliced1
Cucumber, Sliced1
Salad Greens2 cups
Mango Cheeks, Peeled And Thinly Sliced4
Avocado, Peeled Destoned And Thinly Sliced1
Large Handful Coriander
Sesame Seeds, Chilli Slices, Lime Wedges – To Serve
Golden Goddess Dressing & Sauce


  1. FOR CHICKEN: Place all ingredients for chicken (except oil) in a bowl. Mix to marinate and rest for 10 mins. Heat oil on high in a grill/cast iron pan. Pan-fry chicken pieces for 4-5 mins on each side until browned and cooked. Remove and set aside to cool.
  2. FOR NOODLES: Cook soba noodles per packet instructions. Drain and rinse in cold water several times to cool. Drain and add to large bowl with sesame oil, chilli flakes, salt & pepper, onion, capsicum, cucumber, grilled chicken and half bottle of Birch & Waite Golden Goddess Dressing & Sauce. Toss and mix well.
  3. Arrange salad greens on a large serving plate. Top with half of the noodle salad. Arrange mango and avocado on the plate and add the rest of the noodle salad. Garnish with coriander, sesame seeds and chilli. Drizzle with the remaining Birch & Waite Golden Goddess Dressing & Sauce. Serve immediately with lime wedges. Enjoy!
