Golden Goddess Brunch Bowl with Birch & Waite Golden Goddess Dressing & Sauce
|Cherry Tomatoes On The Vine 1 Tbs Extra Virgin Olive Oil||1 punnet|
|Extra Virgin Olive Oil||1 tbsp|
|Salt & Pepper To Taste|
|Halloumi, Sliced||250 g|
|Brown Rice, Cooked And Cooled||1 cup|
|Golden Goddess Dressing & Sauce|
- Preheat oven to 180°C. Place tomatoes on a lined baking tray with a drizzle of olive oil and season with salt and pepper. Bake for 20 minutes or until softened.
- While this is cooking, wilt spinach in a pan on medium heat for 4-5 minutes until reduced in size. Set aside.
- In the same pan, fry halloumi for 2-3 minutes on each side until golden brown.
- Slice avocado and remove from skin. Then place rice, avocado, tomatoes, halloumi and spinach equally into two bowls. Drizzle generously with Birch & Waite Golden Goddess Dressing & Sauce and enjoy.
