Golden Goddess Brunch Bowl with Birch & Waite Golden Goddess Dressing & Sauce

Cherry Tomatoes On The Vine 1 Tbs Extra Virgin Olive Oil1 punnet
Extra Virgin Olive Oil1 tbsp
Salt & Pepper To Taste
Halloumi, Sliced250 g
Spinach2 cups
Brown Rice, Cooked And Cooled1 cup
Avocado1 halved
Golden Goddess Dressing & Sauce


  1. Preheat oven to 180°C. Place tomatoes on a lined baking tray with a drizzle of olive oil and season with salt and pepper. Bake for 20 minutes or until softened.
  2. While this is cooking, wilt spinach in a pan on medium heat for 4-5 minutes until reduced in size. Set aside.
  3. In the same pan, fry halloumi for 2-3 minutes on each side until golden brown.
  4. Slice avocado and remove from skin. Then place rice, avocado, tomatoes, halloumi and spinach equally into two bowls. Drizzle generously with Birch & Waite Golden Goddess Dressing & Sauce and enjoy.
