Sichuan Style Stir Fry with Beef
|Spring onion bulb, diagonally sliced||1|
|Shiitake mushrooms, quartered||1 cup|
|Capsicum, chopped||1 cup|
|Green vegetables, chopped||1 cup|
|Steamed rice, to serve||2 cups|
|Handful of sesame seeds to garnish (optional)|
- Heat one tablespoon of oil in a wok at medium to high heat. Add beef and season with salt & pepper. Sear well until cooked through. Set aside.
- With a little more oil, sauté onion and mushrooms until tender. Add remaining vegetables, tossing on lower heat to tender but slightly crisp.
- Stir through the Sichuan sauce until heated for 2 mins. Combine the beef.
- Garnish with sesame seeds. Serve immediately with rice or noodles.
Try with chicken, or plant based with tofu and vegetables.
